  1. Cortar el tallo grueso del brócoli, reservándolo para otra posible receta. Cortar en ramilletes pequeños, lavar, escurrir y reservar.
  2. Lavar los champiñones y laminar muy finos. Podemos hacerlo con ayuda de la mandolina. Yo los he cortado en la medida 2 de 3.
  3. Cortar a rodajas finas o en juliana la cebolla (como más nos guste). La he cortado también en el 2 de la mandolina.
  4. Cortar el queso en dados.
  5. Poner todo junto en una ensaladera y mezclar.
  6. Poner el aceite, miel, limón y sal en un bote de cristal con tapa, y mezclar hasta que se hayan integrado bien. Si no tenemos bote, poner en un vaso moviéndolo bien con una cucharita.
  7. Echar el aliño a la ensalada, y moler una pizca de pimienta por encima. Mezclar bien para que se mezcle el aliño con todos los ingredientes.
