- Ponemos las alubias en un cuenco con agua fría, y las dejamos en remojo durante unas 12 horas.
- Pelamos y laminamos las patatas. Cortamos el repollo y el lacón.
- Ponemos al fuego, una olla grande con el caldo y más o menos la misma cantidad de agua. Incorporamos las alubias que teníamos en remojo, con los trozos de lacón y el tocino. Dejamos cociendo a fuego medio hasta que las alubias estén blandas, espumando cuando sea necesario.
- Retiramos el lacón y lo desmenuzamos. Y agregamos las patatas.
- Cuando vuelva a hervir, añadimos el repollo y dejamos cocer hasta que tanto éste como las patatas estén hechos.
